Spinach is a hardy crop, but grows best during the cooler season. A quick growing crop, it matures in 40 to 50 days after planting. First sowings are made in the fall or early spring, planting 12-18 seeds per row foot with the rows 14" apart.  Succession plantings may be had at 2-3 week intervals during the season, thus ensuring a steady supply.
